There will be no whisky, but you will find just as much, if not more, depth here
Our host for the evening will be The Whisky Exchange’s own ambassador, veritable drinks polyglot and all-round lovely person, Billy Abbott. He knows both whisky and agave very well, so he is very well suited to introducing those of us who are more whisky-minded to these most Mexican of spirits.
Arguably, agave spirits have the potential to be even more diverse in flavour than whisky. Where whisky depends on a handful of major grain types (with some internal variety still), agave spirits have over 200 species of agave as a starting point. And while both can cite production process variations in the distilleries (equipment, yeasts, timings), agave spirits are more greatly affected by terroir than whisky has been able to prove or invest in so far; that’s partly because of the increased grow times of a large number of the agave species compared to grain crops. Whisky claws some ground back in the cask aging battle, of course, with more variety and considering most agave spirits are white.
